Grilled Fish Tacos with Chipotle/ Lime Dressing

Ingredients

  • Marinade
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons distilled white vinegar
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 1 1/2 teaspoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon seafood seasoning, such as Old Bay™
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon hot pepper sauce, or to taste
  • 1 pound tilapia fillets, cut into chunks

Dressing
  • 1 (8 ounce) container light sour cream
  • 1/2 cup adobo sauce from chipotle peppers
  • 2 tablespoons fresh lime juice
  • 2 teaspoons lime zest
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon seafood seasoning, such as Old Bay™
  • salt and pepper to taste

Toppings
  • 1 (10 ounce) package tortillas
  • 3 ripe tomatoes, seeded and diced
  • 1 bunch cilantro, chopped
  • 1 small head cabbage, cored and shredded
  • 2 limes, cut in wedges

Directions

  1. To make the marinade, whisk together the olive oil, vinegar, lime juice, lime zest, honey, garlic, cumin, chili powder, seafood seasoning, black pepper, and hot sauce in a bowl until blended. Place the tilapia in a shallow dish, and pour the marinade over the fish. Cover, and refrigerate 6 to 8 hours.
  2. To make the dressing, combine the sour cream and adobo sauce in a bowl. Stir in the lime juice, lime zest, cumin, chili powder, seafood seasoning. Add salt, and pepper in desired amounts. Cover, and refrigerate until needed.
  3. Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.
  4. Remove fish from marinade, drain off any excess and discard marinade. Grill fish pieces until easily flaked with a fork, turning once, about 9 minutes.
  5. Assemble tacos by placing fish pieces in the center of tortillas with desired amounts of tomatoes, cilantro, and cabbage; drizzle with dressing. To serve, roll up tortillas around fillings, and garnish with lime wedges.
Cook's Tip
  • The marinated fish in this recipe can also be cooked in the oven. Preheat oven to 350 degrees F (175 degrees C). Bake fish in preheated oven until it easily flakes with a fork, 9 to 11 minutes. Assemble tacos according to directions. Mahi-mahi can be substituted for the tilapia.

Summer Table Setting




Setting the table.... one of my favorite things to do before guests arrive. I figure, if all else fails in the kitchen, the focus will be on the beautiful atmosphere and conversation. :)

Here I set the table for an early summer dinner. I love to mix colors, texture and materials. I chose the palette of green and white with hints of yellow, like a summer's field of wild flowers.

The dinner plates and coffee cups are a mix of House Doctor's Linen plates with Rice's Italianware porcelain. The glasses are from House Doctor from their beautiful vintage glass collection. I love them. All glasses tend to be a different shade of color with different engraving characteristics. You can find them on our website at http://www.sucasa.se/sv/grp/serviser-glas.php .

I used two tall glass hurricanes, one with candle and one with flowers as the centerpieces. Rule #1 in decorating the table; always start with the centerpiece, that way you can tell the story from there.

Small details: Vintage silverware from Chehoma, white crochet napkins and table cloth from House Doctor, and candles from Villa Collection.

The beauty of setting the table is that it is individualistic and can be different every time! It is exciting to go to someone's house and see the ambience they set before you. They are creating that mood for you. So enjoy decorating! Have fun! And remember Plan B, (after Plan A - delicious dinner) Plan B - beautiful atmosphere.

Welcome to Su Casa’s Blog!!

Hello.

Thank you for coming into Su Casa's blog! I am happy to see that you have found your way in here. The Internet is a very big place and I hope you feel lucky that you found us too.

A little bit about us. We are a home interior and accessories boutique located in the Värmdö Köpcentrum in Mölnvik, right off the 222. Due to the great response from customers in other parts of Stockholm and Sweden, we recently launched this web shop on March 15, as an outward reach to the rest of Sweden.

We carry many products from House Doctor, Guzzini, Rice, Himla, Lisbeth Dahl, Madam Stotlz, IB Laursen, Chehoma, Villa Collection and many more. We are still in the process of uploading all our products to the web, which will take some time, as we are constantly getting new things delivered! Let us know if you are looking for an item from one of our vendors as we might have it but just not on the web yet. In the end, we hope to carry 90% of our stock on the web shop. We are saving the remaining 10% for special experience of visiting the local store.

Please note, we do have a special offers to locals in the Stockholm vicinity. If you shop online, you can come and pick up your products in the store on the way to your summer retreat! Or, if you are in a hurry on the weekends, with family and kids, it might help to shop ahead of time!

We hope you enjoy the site and come back often to see what is new. We always have new stuff coming but especially this August, we are getting two vendors, not yet here in Sweden! But, you will have to wait and see. I will keep you posted!

In this busy age where we run to work, school and extra-curricular activities, you may be home hardly long enough to see your family much less your neighbors.

One great way to connect with your neighbors is by planning a potluck block party. Instead of firing up the grill for ordinary hamburgers, make one of our Top 10 Burger Recipes. See Su Casa Recipe cards in the boutique this week!

Busy families need potluck salad recipes and potluck side dish recipes that can be easily assembled ahead of time. Try our crowd-pleasing Tossed Salad with Lemon Vinaigrette or Ground Beef Baked Beans.


Block Party Plan

Start getting to know your neighbors even before the party begins by forming a block party committee.
Go door to door to visit your neighbors with a flyer for the party. Explain to them about the party, ask them if they think that they will be able to attend and if they would like to be on the committee.
Take a sign up sheet along asking the following questions:
  • Family name
  • Address
  • Phone
  • Email
  • How many people will attend, names and children's ages
  • How they can help
  • What food would they like to bring
  • Do they have any special equipment available for use? Tables, chairs, tents, etc.
Not only will working together make the party easier to organize, you'll make some new friends in the process. Have one person act as the main contact person, then assign other groups to handle the following:
  • Permits and other legal requirements. Many communities require a permit for block parties. Determine an alternate parking area for people who live in the section of the street where the party will take place.
  • Food and refreshments. Potlucks are an easy way to make sure there's a variety of tasty fare at your block party. To keep from having a buffet full of chips or desserts, circulate a sign-up sheet with assigned categories such as salads, veggies and desserts. For the main course, charge a per-person fee and purchase grill meat or have each family supply their own.
  • Activities. Bicycle decorating contests, scavenger hunts, relay races...the sky's the limit when it comes to planning the fun and games for your neighborhood block party. To make sure both the young and young at heart have a good time, include a variety of activities that appeal to a wide age range.
  • Set up and clean up. Think about music, decorations, plates, cutlery, napkins. Have a potty talk—determine if people will use the restrooms at their home or rent a portable restroom.

Potato Kielbasa Skillet Recipe

Potato Kielbasa Skillet Recipe 



Prep/Total Time: 30 min. - Yield: 4 Servings 15 15 30

Ingredients

  • 1 pound red potatoes, cubed
  • 3 tablespoons water
  • 3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 2 tablespoons brown sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 4 cups fresh baby spinach
  • 5 bacon strips, cooked and crumbled

Directions

  • Place potatoes and water in a microwave-safe dish. Cover and microwave on high for 4 minutes or until tender; drain.
  • In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes longer or until kielbasa and potatoes are lightly browned.
  • Combine the brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted.
